Very Green Dressing (made with no oil)
Serves 8
Ingredients:
a handful of parsley
a handful of fresh spinach
1/2 a small zucchini, cut in chunks
10 to 15 fresh basil leaves (2 teaspoons dried)
1 medium garlic clove
1 cup buttermilk
1/4 to 1/2 teaspoon salt
1 teaspoon lemon juice
Optional: a few pieces of ripe avocado; moderate amounts of other fresh herbs (chives, dill, or cilantro)
Whip it up in a blender or food processor. Makes a generous cup.
