Faux Open Faced BLT

This sandwich is a great hit in my family, especially with my husband.

12 Sun dried tomatoes packed in oil, drained and cut in half
8 strips Morning Star Bacon Strips
4 thick slices good quality whole grain bread
6oz Feta cheese, crumbled (or goat cheese)
4T Fleischmann's Olive Oil Spread
1C Grated Mozzarella cheese
3/4C Kraft Mayo with Olive Oil
1/8C Fresh flat leaf parsley, finely chopped
1/8C Fresh Basil, Chiffondale
1 small zucchini thinly cut with a vegetable peeler.
4 green onions sliced thin (divided into four equal parts)

1. Cook the Bacon Strips over medium-low heat for 8-10 minutes. You want them crispy. Crumble and set aside.
2. Combine the Feta, Mozzarella, Mayo and parsley together and mix well. Divide into four parts. Set aside.
3. Butter both sides of the bread with the olive oil spread. Toast the bread, in a skillet, on both sides until golden brown. Remove from pan and set on cookie sheet.
4. Spread the cheese mixture on top of each of the toasts. Then top with the crumbled bacon, sun dried tomatoes, green onions, basil and zucchini strips. Season with freshly ground black pepper.
5. Put under the broiler until toasty and the cheese is starting to melt. Serve immediately.

Serves 4.
