Seasonal Fruit Salad with Poppy Seed Dressing

Oh my this is an awesome salad. Stright from "The Pastry Queen's Christmas". The onions in this salad give it a tiny bite which may be too hot for little ones.

Seasonal Fruit Salad with Poppy Seed Dressing (Serves 4)

Dressing:
6T sugar
1/2t dry mustard
2T + 2t white wine vinegar
1T grated white onion (i minced mine in the blender)
1/2C canola oil
1 1/2t poppy seeds

Salad
2 Granny Smith apples, cored and diced
2 Bosc pears, cored and diced
2 clementines or Satsuma oranges, peeled and sectioned
Seeds from 1 pomegranate
1/2C walnut or pecans, toasted.

To make the salad dressing: In an electric blender, blend the sugar, mustard, vinegar, and onion on medium-low speed. With the machine running, gradually add the oil. Add the poppy seeds and blend just to incorporate. Pour the dressing into a glass jar. Cover and refrigerate any leftover dressing for up to 1 week.

In a large bowl, toss the fruit with 1/2C of the dressing. Refrigerate for at least 30 minutes or up to 5 hours. Add the nuts just before serving and toss to mix.
