Avocado, Orange and Almond Salad

I found this great recipe in "The Complete Mediterranean Cookbook". It was very easy to make. One suggestion I have is to cut the orange in to cubes for ease of eating.

2 Oranges
2 Ripe Tomatoes
2 Small Avocados
1/4C Extra Virgin Olive Oil
2 T Lemon Juice
1T Chopped Fresh Parsley (I used Italian flat leaf)
1 Small Onion Sliced Into Rings
Salt and ground black pepper to taste
1/4C Sliced Almonds
10-12 Black Olives

1. Peel the oranges and cut into thick slices. PLunge the tomatoes into boiling water for 30 seconds, then refresh in cold water. Peel off the skins, cut into quarters, remove the seeds and chop coarsely.
2. Cut the avocados in half, remove the pits and carefully peel off the skin. Cut into chunks.
3. Combine the olive oil, lemon juice and parsley. Season with salt and pepper. Toss the avocados and tomatoes in half of the dressing.
4. Arrange the sliced oranges on a place and scatter the onion rings over them. Drizzle with the rest of the dressing. Spoon the avocados, tomatoes, almonds and olives on top.
