Tropical Fruit Salad

This salad is easy to make and easy to substitute fruit. I found this one in my "Moosewood Restaurant Cooks at Home" cookbook. Serves 4

Dressing:
1/2 teaspoon ground ginger
1 tablespoon honey
1/4 cup fresh lime juice

Prepare about 4 cups of some or all of these fruits:
bananas, peeled and sliced
pineapple, peeled and cut into bite-sized pieces
cantaloupe, peled and cut into bite-sized pieces
mango, peeled and cubed
kiwi, peeled, halved and sliced into half-circles
strawberries, stemmed and halved

In a small bowl, mix the giner and honey together well and then stir in the lime juice. Set aside. As you cut the fruit, place it in a large serving bowl, pour the dressing over it, and stir. The lime juice will keep the fruit from discoloring.

This salad keeps well, covered, in the refrigerator for 2-3 hours. If yo wish to make th salad several hours ahead of time omit the bananas and store in the refrigerator. Stir in the bananas a few minutes before serving.

Serve at room temperature or chilled.
